We are kind of huge nacho fans in our home. There are moments that we have to stop ourselves from eating only nachos for days at a time, but when we do cave into that craving for a tasty tower of carbs, meat, and cheese, we usually opt for this simple recipe of black bean chicken nachos. They are pretty easy to make up and the only disappointment is that there are never any leftovers! Below is a recipe that will likely feed three faces, give or take.

Easy Black Bean And Chicken Nachos Recipe:

1 15 oz bag Juanitas Corn chips
1 15.25 oz can Great Value Black beans
1 and ½ cups shredded Great Value Medium Cheddar
Roasted shredded Great Value Chicken breast
Optional green or white onions (optional)
A few scoops of Great Value Sour cream (or plain yogurt)

There is some preparation required if you want to cook the chicken yourself instead of buying a pre-cooked one. You can roast a few pieces of chicken breast in the oven, instant pot or crock pot, whatever works best for you. Then shred the chicken in either a food processor or by hand.

To layer: Spread out the chips on a plate then add enough chicken to cover most of the chips, enough black beans to cover the chicken, and spread the shredded cheese next. I like to microwave the nacho plate at this point for around a minute to get the cheese all melty and help hold the chicken and beans in place. Then start another layer, chips, chicken, beans and cheese until you feel you have layered your nachos to your heart’s desired height of flavor, and microwave again. Top with a scoop of sour cream and garnish with green onion if you’re feeling fancy.
