Have you ever been stuck with a big bag of Craisins now sure what to do with them? It’s not exactly something that happens to me often either, but when I have an excess of ingredients, I really want to throw them together and create something new and tasty. I’m not really the biggest fan of how much sugar is in Craisins, but blended in with some healthier ingredients for breakfast kind of makes them much more tolerable. Below is one of the best waffle recipes ever concocted in our practical household.

Craisin Waffle Recipe:

2 large eggs

2 cups whole wheat flour

1 ¾ cups coconut milk

½ cup coconut oil

4 teaspoons baking powder

¼ teaspoon salt

½ tablespoon sugar

1 1/2 teaspoon vanilla extract (or vanilla flavor)

1 ½ cup Craisins

½ teaspoon nutmeg

¼ teaspoon cloves

Beat the eggs with a mixer or fork then add all other ingredients and combine completely. Pour around 1 cup of batter into pre heated waffle maker. This is the one we are most familiar with and close it. Cook for two and a half to three minutes on each side, so five or six minutes per waffle. If you like your waffles with a bit more crisp, cook for an additional 30 seconds on each side.
